A few weeks ago I created a What’s For Dinner board on Pinterest, to help organize the recipes I plan to try for the week. My plan is to delete the ones I wouldn’t make again and move the one’s I would to the Successes board.
In addition I thought it would be fun to occasionally share my results here.
Monday
I made Tilapia and this spinach and tomato risotto. My plan had been to make this pesto tilapia, but I felt that it would compete with the risotto. So I made up my own tilapia dish.
Tomato Basil Tilapia
Serves 2
2 – tilapia fillets
1/3 cup white wine
1/2 can diced tomatoes
fresh basil (torn)
breadcrumbs
2 tablespoons butter
Preheat oven to 400
Place fillets in an oven safe dish, pour white wine into dish. Dump tomatoes on top of the fillets, top with basil. Put butter and breadcrumbs in a dish and microwave till butter starts to melt. Mix butter and breadcrumbs until combined adding more breadcrumbs if needed. Spread mixture on top of fillets. Bake for 10 minutes.
John and I both enjoyed this dish and I’m a huge fan of the risotto. I’ve made it about 3 times and every time I want more.
Tuesday night I made my new favorite recipe Chicken Tamales. This recipe is simple and delicious every time I’ve made it. I’m fairly convinced that I would make this once a week and still love it. Did I also mention that it is low cal and makes enough to have leftovers the following night.
On Thursday night I kept it simple with raviolis, which is always a crowd pleaser in my house.
Friday night I made crock pot cashew chicken. I don’t think I will make it again, John and I both felt that the sauce was on the strong side. Overall it was really easy but, I just wasn’t crazy about it.

P.P.S: Next time I do a food post I promise to get better pictures. I always tend to be in a rush to eat it / not let it burn.

That was one of the reasons I decided to do a post like this because sometimes I pin things and they are awful and I think it would be helpful to know that before you buy the ingrediants and make it.

It was so good that my husband said it was an excellent meal and it takes alot to get him to comment on food.
