Yes, I like Pina Coladas and getting caught in the rain.
The other day I was attempting to recreate an Avocado Smoothie that I had in Sea Isle.
The recipe called for a tablespoon of plain Greek yogurt and all I had was coconut. So I figured it was only a tablespoon and a little coconut never hurt, right?
Right, cause as soon as I tasted my smoothie I had one thought. Perfect Pina Coladas!
But it was only 11 am…
So I text messaged my neighbor and at 6 pm showed up with my newly created Pina Coladas. These are low cal and delicious and just hit- the- spot- yum for these hot end of summer days.
Perfect Pina Coladas
What you need:
1-container Chobani Coconut Greek Yogurt
1- cup Coconut Milk
Ice
Capt. Morgan Parrot’s Bay to taste.
Pour ingredients into the blender and blend until smooth. Add extra rum if needed, lets be honest here in Jersey school is not back in session and the extra rum is needed.
Serve and Enjoy. This makes roughly 4 servings and is about 55 calories a serving, not counting the rum and really who is counting the rum?

PS: Am I the only one who has flashbacks to high school whenever I taste some coconut rum?
