In our house we try to have one meatless meal a week. Not only is it healthy to go meatless once in awhile but it also saves money and time. Meatless meals generally take less time to cook. I can quickly throw together vegatarian tacos or a simple salad, without having to worry about what temperature to cook it at and if the meat is defrosted. Meatless Monday is a great way to get kids to eat their veggies.
Meatless meals are a great way to get kids to eat vegetables. My son loves vegetarian tacos and tomato soup. My meat not being an option he’s forced to eat the vegetables on the plate.

I love soup. I could probably live off a variety of soups if I didn’t think that John would go nuts. But we both love this tomato soup that is perfect for dunking grilled cheese in. If you love tomato soup I highly recommend it and it is Jack approved.
Mexican food is another food that I could eat every day and never get bored. Clearly, I don’t need meat to enjoy tacos but I do need more than guacamole, sour cream and cheese. I was hesitant to try these tacos which call for sweet potatoes and honey but wow, they are so good that I may never go back to beef.
These sesame noodles have become a go-to meal in our home. John loves Chinese food but I haven’t been able to eat it since I was pregnant with Jack. These noodles are simple, delicious and satisfy any take-out cravings.
This tortellini with eggplant and peppers has been one of our favorite recipes for years. It’s the kind of dish that you make and think, “I could serve this to guests”. It’s just that good, it’s also incredibly easy and comes together really quickly.
While giving up meat I have still been eating seafood. I live at the Jersey Shore and I love seafood, give me a pound of crabs or a couple of dozen clams and I’m a happy girl. This fish recipe is something I made awhile back but love to make again and again.

I would definitely say pasta would be one of my favorite meatless meals but I don't eat a lot of it anymore. I also love salads and they don't have to have meat, although I do like them that way… 🙂
