This week feels a little hectic with lots going on leading up to Halloween. So I’m keeping the meal plan pretty basic this week and of course including some pumpkin filled meals.

Monday: Pumpkin Chipotle Enchiladas. I haven’t been able to stop thinking about these since my friend Marci, Vegging at the Shore, posted them a few weeks ago. I’m thinking of swapping some of the veggies (sorry Marci) for some black beans and chicken.
I also have to take a meal to one of the members of my Moms Club who recently had a baby. I’m making these chicken tamales that after a suggestion from Marci (she seriously has the best recipe suggestions) has been a big hit with friends and family.
Tuesday: My work schedule is a little switched around this week, so I’m working on Tuesday. I’m planning to make these Sesame Noodles, that have become my go-to meal for days when I’m too busy to make a meal but don’t want to resort to standard pasta. Sometimes I add some steamed broccoli to it other times I just can’t be bothered.
Wednesday: Jack has his school Halloween party and I’m off. Friends invited us out to dinner and I suggested Roberta’s in Northfield, after reading this great review.
Thursday: I work and then we are carving pumpkins with our neighbors, so I’m hoping for something simple like ordering pizza.
Friday: Halloween! I’m really looking forward to Halloween this year, Jack is really excited to dress up and trick or treat. Our neighbors are having a post trick or treat party, which means I have an excuse to dress up this year. I love Halloween and getting to be someone else for the night, is always fun. I’ll be making my Buffalo Chicken Dip and possibly these Brie bites. Both are easy to make and I can simply take them down to the party after my trick or treat duties.
Drink pairings
This week I’m venturing out of the wine zone and have been drinking some great pumpkin beers. I highly recommend Shipyards Pumpkinhead Ale, it is delicious on it’s own and it not too hoppy or heavy. For an added bonus, rim your glass with cinnamon and sugar and enjoy.

I know nothing about alcohol so I wouldn't know what goes well with foods. I've been to pairing dinners and love them though

Pairing dinners are so much fun, I recently went to a Halloween wine pairing and it was great.

I've been thinking about Marci's enchiladas as well. I love pumpkin ale, but can no longer drink it. Angry Orchard is my new go to.
