With St. Patrick’s Day coming up I’m in the mood for all things mint and green. When I was younger I used to splurge on a certain mint green milk shake, but that really doesn’t agree with me these days. I wanted something mint and green for St. Patrick’s Day and these Mint Chocolate Chip Cookies really hit the spot.
Mint Chocolate Chip Cookies
2 1/4 cups Flour
1 tsp. Baking Soda
1 tsp. Salt
2 sticks of butter softened
3/4 cup Sugar
3/4 cup Brown Sugar
1 tsp. Vanilla Extract
1.5 tsp. Mint Extract.
2 Eggs
1/2 cup chocolate chips
1 cup Mint M & M’s
Preheat oven to 375
1. Combine Flour, Baking Soda and Salt, set aside.
2. Beat butter, sugars, vanilla and mint extract until combined.
3. Beat in Eggs
4. Slowly beat in flour mixture.
5 Stir in chocolate chips.
6. Drop by rounded tablespoon onto cookie sheet.
7. Top cookies with 3-4 Mint M & M’s (you could also stir these in if you like a chunkier cookie)
8. Bake 10-12 minutes.
These cookies are just minty enough and make the perfect St. Patrick’s Day snack. Though I admit I’ve been enjoying them for breakfast and at night with a glass of white wine.
