Fried Chicken and Waffle Cones

If I hadn’t named this blog Wine In Mom, then it’s likely I would have called it Fried Chicken and Fine Wine. Because I love fried chicken and I love combining something classy with some thing comforting. I would have fried chicken and wine every week if I could but, I’m not great at frying chicken (or frying anything for that matter). But my neighbor is great at it and we have a deal, that if I buy, he fries. Doesn’t get better than that does it?

Last week when I was at the Disney Social Media Moms Celebration, I got to try chicken and waffles for the first time. This is one of those meals that is on my food bucket list. Yes, I have a food bucket list and I crossed a few off on my recent Disney trip.

On the first night of DSMM we were treated to a wonderful dinner at Epcot which included fried chicken and mashed potatoes served in a waffle cone. I picked one up for myself and then my husband grabbed one for me because that combo had my name all over it.

The first day we were home from Disney, I knew I had to recreate that dish.

Here’s what I did:

1. Make Mashed Potatoes, this recipe is great or you can use instant if you like.
2. Make Fried Chicken, this is recipe is great, I ended up using Trader Joe’s Frozen Breaded chicken tenders, cause like I said bad at frying.
3. Once mashed potatoes are done and warm but not too hot, spoon them into the waffle cone, then top with fried chicken.
4. Drizzle with a topping, I used honey but you could use BBQ sauce, sriracha, ranch dressing or anything else that you would like on chicken and mashed potatoes.
5. Serve.

I love that this meal is self contained, no need for a side dish. It can me made simply or from scratch and it’s just fun, whimsical and delicious.

When I had it for dinner on Monday I was instantly taken back to all the fun I had at the Disney Social Media Moms Celebration. And that is what comfort food does it takes you back.
