Some days I eat super healthy things like kale smoothies and yogurt. Other days I look at the leftover mashed potatoes in my fridge and think, “lets add some cheese and bacon to them and fry them up”.
Yeah that happens sometimes. This weekend I had this memory of my Mom making me potato pancakes with mashed potatoes. And wanting a bit of comfort food I decided to make some for lunch, having cheddar cheese and bacon on hand was just luck and what followed was so delicious I knew I had to share it.
Mashed Potato Bombs
About a cup or more of leftover mashed potatoes
Crumbled bacon about 2 slices but who can never have enough bacon.
1/3 cup cheddar cheese
Flour
EVOO
Heat a frying pan with 2 Tbsp EVOO over medium heat
Take about a 1/3 cup of mashed potatoes and roll in bacon and cheese, mash together until combined.
Roll in flour to coat.
Place in frying pan and fry for about 4 minutes on each side or until it flips easily and the bottom is brown.
If you want to go all in, top with sour cream and enjoy.
I hate wasting leftovers and these are the perfect way to turn leftovers into another meal. And really you can’t go wrong with potatoes, cheese and bacon.
