Picky Kid Approved Chicken Broccoli Casserole

Dinner time is a battle ground at my house.  Unless I’m serving mac and cheese, pizza or ravioli’s meal time involves a lot of “please, eat your dinner” and “but you liked this last time you ate it” and “it’s just chicken please eat it”. Whenever we manage to make it through a meal without arguments or negotiations, I feel like doing victory laps around my living room.

Which is what makes this dinner I’m about to share with you so epic, because I nearly jumped out of my seat with joy when Jack ate all of it and didn’t once complain. In fact he said that he really liked it, another rarity of dinner time a compliment. The meal that brought all this joy to my house? This easy chicken broccoli casserole that my Mom has been making for years.

This easy chicken broccoli casserole is picky kid approved for a fuss free family dinner.

Picky Kid Approved Chicken Broccoli Casserole

1 bag Frozen Broccoli florets

1 23 oz can of cream of chicken soup

1/2 cup of milk

1-2 lbs chicken tenders (about 6) (I use tenders but chicken breast works too)

1/4 cup bread crumbs

2 Tbsp butter

1 clove garlic

1/2 cup shredded cheddar cheese

Directions:

Pre-heat oven to 350 degrees. Place frozen broccoli in a 9 x 13″ casserole dish. Combine cream of chicken soup and milk and pour on top of broccoli. Place chicken on top of broccoli. In a small microwavable dish place butter and bread crumbs and microwave until melted about 25-30 seconds. Add garlic to bread crumb and butter mixture, mix until combined and then sprinkle on top of chicken and broccoli. Top casserole with cheese. Bake for 40 minutes (depending on the thickness of the chicken it might take longer). Serve over top of mashed potatoes.

A few alternatives: I sometimes double the bread crumb mixture because it’s my husbands favorite part of the dish, I suggest doing it for added flavor. You can also serve this over rice or on its own.

What I love about this chicken broccoli casserole is that it’s easy to make with items that I frequently have on hand. It’s a true comfort meal that everyone in my family enjoys, which is rare around here. And because it is picky kid approved I will definitely be making this a frequent appearances on our meal plan.
