Confession time, I love baby food. Not just in a “I love feeding it to my kids” but in a I love eating it as a snack kind of way. Gerber Banana stage 2 baby food has always been a comfort food for me. In high school I would bring it for lunch, and while I got some strange looks I never cared. When I moved in with John he would give me strange looks when I would pick it up at the store. But really who says that baby food has to be for babies, after all baby food is packed full of great vitamins and nutrients.
I’m always looking for ways to make meals healthier and to ensure that my whole family, not just my son, are getting the vitamins and nutrients that we need. With a newborn in the house planning and preparing healthy dinners has not been the easiest thing. And these days I really don’t have the energy to battle with my 5-year-old about eating his veggies. Which means I need to keep healthy snacks on hand so that he can easily help himself to a nutritious treat.
I always have bananas on hand because they are perfect for baking up healthy treats even after they have over ripened. These simple fruit filled banana muffins pack lots of vitamins and are easy to prepare and great for little ones to grab as a snack.
Fruit Filled Banana Muffins
1 Cup All Purpose Flour
1 Cup Gerber Oatmeal and Banana Cereal
1/4 TSP Salt
1 TSP Baking Soda
1 TSP Cinnamon
1/2 Cup Coconut Oil, melted
3/4 Cup Brown Sugar
2 Eggs
3 Ripe Bananas (smashed with a fork)
1- 4 oz container of Gerber Fruit Stage 2 Baby Food (we used Peach and Strawberry,Banana,Apple)
Preheat oven to 325. Combine first 5 ingredients in a large bowl. In a second bowl combine coconut oil, brown sugar, eggs and bananas. Add wet ingredients to dry ingredients. Place liners in a muffin tin, fill each liner about 1/3 of the way with batter, top each muffin with 1/2 tsp Gerber Stage 2 Baby Food, top muffins with additional batter making sure the baby food is covered. Bake for 25-30 minutes.
Gerber cereals come in 4 varieties Single Grain Oatmeal, Multigrain, Oatmeal and Banana and Lil’ Bits Oatmeal Banana Strawberry. They are fortified with Iron and Vitablock (a blend of 6 B vitamins, Vitamins E and C, Iron, Zinc and Calcium) . The Gerber cereals make a great addition or substitution in recipes and can conveniently be purchased at Walmart.
I made these muffins during a week when I knew we were going to have family in and out helping with Grace. Jackson and John both enjoyed the muffins and my father who tends to steer clear of baked goods, had a couple of them before taking Jack to swim lessons. I appreciate all of the help my family has given me these past few weeks and it was nice to have a homemade delicious snack available for them during this hectic time.

I like to use ground cereal in no-bake energy bars, with nut butter, dried fruit, honey and other goodies. Yum!
