I spend the majority of my day feeding other people. I get up feed the dog, make Jack breakfast, feed Grace breakfast and make Jack’s lunch all before I’ve even bothered to feed myself. There are days where I forget if I ate more than a piece of toast for breakfast and other times when I find myself hangry at 2:00 because I forgot to eat lunch.
Lunch is the easiest meal for me to forget, mostly because I don’t tend to buy much at the grocery store that is just for lunch. Usually I eat leftovers or snack when there aren’t any leftovers. I recently realized that a late afternoon bad mood is usually related to what I had for lunch. If I eat a lousy lunch my blood sugar drops and so does my mood. So I have been trying to have quick-lunch items on hand that are filling and healthy. I was in the mood for lettuce wraps and threw together these quick, chicken lettuce wraps with peanut sauce.
Chicken Lettuce Wraps with Peanut Sauce
Ingredients
1 Head of Lettuce
1/2 Cup Shredded Chicken (I use a rotisserie chicken)
1/2 Cucumber diced
Handful Shredded Carrots
2 TBSP Hoisin Sauce
1/3 Cup Peanut Butter
1 TBSP Extra Virgin Olive Oil
1/4 Cup Rice Wine Vinegar
1/2 Cup Water
1 TBSP Sesame Oil
Sriracha to taste
Directions
Combine all ingredients in a bowl or large cup or mug, and using an immersion blender, blend until combined and the consistency is uniform. Pull Lettuce leaves apart, take one leaf and fill it with chicken, cucumber and carrots, top with as much of the peanut sauce as you wish. The sauce makes enough for you to use it for several wraps and will keep about a week in the fridge.
I love having an easy lunch on hand and I usually use a rotisserie chicken so that I don’t have to cook anything. Having a rotisserie chicken on hand is always a great cheat for meals that call for shredded chicken.
