This past month has been a really hectic month for my family. We went on two trips and now we are heading into back to school, along with soccer and other activities starting back up. Not to mention I started a new job. All of these combined mean that my dinner game is way off. With so much fun happening this fall, I do not have time for labor intense meals. I need meals that are quick, easy and that even my picky eaters will eat. I also want meals that are healthy and offer a variety of options so that no one gets bored or can’t find something that they like to eat.
Easy Week Night Make Your Own Salad Bar
- Ready-Pac Multi Serve Salad
- Can of Black Beans
- Shredded Chicken ( I use a rotisserie chicken)
- 1 Tomato Diced
- Shredded Cheddar Cheese
- Tortilla Chips Crumbled
- Your families favorite salad dressings
Directions:
Cut up tomato. Open can of black beans and rinse. If using a rotisserie chicken cut into bite size pieces. Lightly crumble tortilla chips. Place salad toppings in individual bowls, so that each family member can pick how much of each item they want.
Tips:
- Let kids decide how much of each item they want in their salad.
- Make it fun, use colorful bowls and dishes.
- Don’t pressure kids to add more veggies, they will get there in time.
- Mix it up, feel free to add your families favorites to the salad bar.

When I was growing up we had salad with dinner every night. It was such a great tradition. I love the idea of making a salad bar so everyone can create a salad of their choice. And what an amazing giveaway. Attending the festival would be incredible.
