It’s finally tomato season in New Jersey. If you’re like me you wait all year for those delicious red, ripe Jersey tomatoes. It is definitely one of my favorite seasons and I’m always excited to make some of my staple tomato recipes like Caprese salad, BLT’s and cucumber and tomato salad. This year we have joined a CSA and my husband has a small garden out back which means I’ll have lots of fresh tomatoes to eat this summer. But when you have an abundance of a fruit or vegetable for a season it can sometimes be overwhelming you don’t want to eat the same thing all the time but you also don’t want them to go bad. I was lazy this year and didn’t plant my usual vegetable garden. (The warm weather was slow to come, so I didn’t have my normal urge to run outside and basque in the spring sun.) 🙂
That said, I was lucky enough to have some friends give me fresh tomatoes from their garden. I’m one of those strange people who doesn’t enjoy a fresh, raw tomato, but absolutely love tomato sauce.
