Last year I got an Instant Pot from my mom. I was intrigued by it but I was also really terrified of my Instant Pot. It sat in the box for weeks before I got the courage to open it. And when I finally did open it, the first thing I did was make hot water. I followed all of the instructions in the box and heated up some water. And it seemed to go well, nothing exploded so I moved on to butternut squash soup and then oatmeal. Since then I’ve been looking for easy instant pot recipes.

In the past year, I’ve been using my Instant Pot approximately 2-3 times a week. It saves me so much time. I typically start dinner after work and then once everything is in the pot I set it and forget it. I love that I can walk away and not worry about dinner, I love that I only have to clean one pot, I love not having to stand in front of the stove during the witching hours.
